Freezer Friendly: Zesty Chicken Penne with Broccoli
If your freezer is ready for you to fill with delicious food, this is a delicious batch cooking freezer friendly recipe that’s just perfect for making ahead. The benefits of batch cooking include saving money, wasting less food and spending more time in the evenings with your family. This way, you can always have a meal waiting for you at the end of the day. It’s a great way to make weeknight cooking manageable!
Ingredients
2 tbsp butter
3 cloves garlic, finely chopped
170g penne pasta
475ml chicken stock
450g frozen broccoli cuts
Chopped deli rotisserie chicken (from an approx 1kg chicken)
1 1/2 tsp lemon zest
Salt & pepper
Juice of half a lemon
25g grated Parmesan cheese
Method
In a pan, melt butter over medium heat. Add garlic; cook for about 1 minute, stirring until fragrant and softened.
Stir in uncooked pasta and chicken stock. Heat to boiling, stirring occasionally; reduce heat to medium-low. Cover; simmer 11 minutes and stir well.
Add lemon juice. Spread broccoli and chicken over pasta. Cover; cook for about 15 minutes longer, until pasta is tender.
Stir in lemon zest, season with salt & pepper, top with Parmesan cheese and enjoy your deliciously zesty chicken penne with broccoli!
Freezing Tips
Cool items to room temperature. To avoid contamination, don’t leave food out for more than 2 hours.
Consider dividing into two smaller containers in case you’ll be feeding less people.
For extra ease you can use containers that can go from freezer to oven. I like the foil containers with covers. Place the containers in plastic bags and label and date before freezing.
